This is my friend Crystal's artichoke dip that she made for a party that everyone raved about.
First off you need to roast the garlic, so what I do ahead of time is, take a whole head of garlic and cut off the top of it. I drizzle olive oil all over the top and bake it for about 40 min. at 400 degrees. You can keep it in a plastic baggie in the fridge and use it as needed.
So, put the cream cheese, parmesan, mayo, in a large bowl. Use an electric hand mixer and mix it all together. Chop up your green onion and garlic and drain your artichokes. Add these to the bowl along with the hot sauce, lemon juice and salt and pepper. Use the electric mixer. I use a small glass baking pan and spoon the mixture into it. Put in the oven for 30-35 min. at 325 degrees.
I usually get a fresh loaf of french bread at the grocery store and cut slices then place on a baking sheet and drizzle olive oil over the top, and bake for 1-2 minutes on broil. YUM!
That's a 14 oz. can / jar of artichokes.
