broccoli, tomatoes, red peppers, red onions, kalamata olives, feta cheese, and toss with red wine vinegar and olive oil. add salt, pepper, and fresh oregano or basil to taste.

pasta salad? with lots of beans and veggies in it(or meat if you eat it), it could be filling enough to be a meal rather than just a side. use corn, black beans, red peppers, onions, pepperjack cheese, a *little* ranch dressing and some chili seasoning to make it 'southwest' style.

or a baked pasta dish to freeze and keep on hand for one of those times you may need it?
