Food, Heat, Don't wanna cook, HELP?

OK, it's in the 80s and it's something like 90% humidity and I don't want to cook. But eating out is so not OK anymore. We just can't afford it (financially or physically). So here's what I've got in my fridge and cupboard, give me your hot day safe recipes! The only rules are that it has to be quick to fix or able to be put in a crockpot, relatively healthy and vegetarian or able to be made vegetarian.
Dessert recipes welcome
Fresh Cilantro
Fresh Parsley
1 Avocado
4 Medium red potatoes
8 large spring onions.
3 turnips
a kitchen bag full of mustard greens ($4 at the farmers market!)
4 med russet potatoes
1 large white onion
a 5lb bag of carrots
1 Yam
a dozen eggs
1 med container soy yoghurt
a brick of Monterey jack *vegan* cheese
white, brown and wild rice
corn tortillas
a tube of polenta
oats
red lentils
1 lb bag mung beans
more mustard seeds than I know what to do with
2 lbs cashews
several varieties canned tomatoes
canned beans (chickpeas, black beans etc).
Coconut milk
corn meal
1 can enchilada sauce.
rice milk
a variety of juices
agave nectar
maple syrup
honey
lemon juice
some really old garlic
1 lb bing cherries
smart balance non-hydrogenated margarine
oils of various sorts
balsamic vinegar
a variety of baking needs (flours, sugars, egg replacers, etc).
Frozen rhubarb, sweet potatoes and squash
frozen peas, peas and carrot wheels, corn and wok veggies
frozen bananas and forrest berries (rasp, blue, black and straw).

pretty much every major spice one can have (including curry, turmeric, five spice, garlic pdr, onion pdr, basil, rosemary, cinnamon, cloves, extracts etc)
