Food, Heat, Don't wanna cook, HELP?

OK, it's in the 80s and it's something like 90% humidity and I don't want to cook. But eating out is so not OK anymore. We just can't afford it (financially or physically). So here's what I've got in my fridge and cupboard, give me your hot day safe recipes! The only rules are that it has to be quick to fix or able to be put in a crockpot, relatively healthy and vegetarian or able to be made vegetarian.

Fresh Cilantro
Fresh Parsley
1 Avocado
4 Medium red potatoes
8 large spring onions.
3 turnips
a kitchen bag full of mustard greens ($4 at the farmers market!)
4 med russet potatoes
1 large white onion
a 5lb bag of carrots
1 Yam
a dozen eggs
1 med container soy yoghurt
a brick of Monterey jack *vegan* cheese
white, brown and wild rice
corn tortillas
a tube of polenta
oats
red lentils
1 lb bag mung beans
more mustard seeds than I know what to do with
2 lbs cashews
several varieties canned tomatoes
canned beans (chickpeas, black beans etc).
Coconut milk
corn meal
1 can enchilada sauce.
rice milk
a variety of juices
agave nectar
maple syrup
honey
lemon juice
some really old garlic
1 lb bing cherries
smart balance non-hydrogenated margarine
oils of various sorts
balsamic vinegar
a variety of baking needs (flours, sugars, egg replacers, etc).
Frozen rhubarb, sweet potatoes and squash
frozen peas, peas and carrot wheels, corn and wok veggies
frozen bananas and forrest berries (rasp, blue, black and straw).

pretty much every major spice one can have (including curry, turmeric, five spice, garlic pdr, onion pdr, basil, rosemary, cinnamon, cloves, extracts etc)

are my quick summer go-to. easy, cheap, no cooking involved... and you can throw in whatever you want! my favorite summer sandwich: red pepper hummous and taboule on a mulitgrain bagel with lettuce, cheddar cheese, and red onion. yuuuum!

put a cup of lentils in the crockpot with a cup and a half of water, that can of coconut milk and that yam (peeled and cut into cubes). I'd add chopped onion, the old garlic, cinnamon, cardamom, clove and a little bit of honey/maple syrup, as well as salt or tamari, and I'd add about a tablespoon of the mustard seed (if you can quickly cook it in heated oil, it would be better, but if not, still works). Turned on high these should be done in 3 hours (1.5 in a regular old saucepot on the stove).

A quick way to make those greens up would be to wash them and then cut them up into small strips. Throw about 1/4 -1/3 cup of the vinegar into a sauce pan with 2-3 tablespoons of olive oil, a tablespoon of agave nectar, lemon juice, some salt and pepper and some herbs and then heat it up until you've got it almost boiling and then pour it over the greens. You could serve the warm salad with chunks of avocado on top and some cashews...

Cut your potatoes into quarters and let them marinate over night in a bag with cut up garlic, lemon juice and olive oil...then roast them on the bbq Smiling Thats one of my favorites Smiling

maybe make burrito thingies with the beans, tomatoes, enchilada sauce and some greens...and slive some avocado on it?

can of tomatoes, can of chickpeas, greens...spice with what you want, def. cumin, a lil balsamic, garlic and onion...I usually do it with spinach, you probably would want to boil the greens for a bit on their own first then add it all together and serve over rice.

yogurt + fruit + oats = dinner. Nuts can go in there too, and/or dried fruit. The whole country lives on this shit.

all those frozen fruits + yogurt and/or soy milk + flax oil = a lovely smoothie. I've been known to put avocados in my smoothies also but I *really* like avocados.

A more "traditional dinner" idea:

I'd throw lentils, carrots, onion, garlic, etc into a crock pot and then eat them for a few days with microwaved potatoes or the polenta. You could throw in the frozen veggies if you got bored after a couple of days...

So this is a cooking recipe but it yields leftovers that can be reheated in about 2 minutes for days and you could conceivably crock pot it, I suppose--I've never used a crockpot but I can't see why it wouldn't work...

chop white onion, some garlic, and fry in oil.
after a minute add about 2 teaspoons each (or more) cumin, coriander and chili powder.
fry til fragrant.
Add cubed yam (or some frozen squash about 2 cups or so?) and some of the chopped mustard greens and some chopped parsley and 2 cans of beans--maybe one black and one kidney or chick pea and a can of tomatoes. Add salt to taste and some ground pepper.
simmer all of this for about an hour and then blend to a thick, smooth consistency.
Serve on corn tortillas with some avacado/cilantro and you've got burritos today. Heat the beany stuff in corn tortillas tomorrow with some cheesy type thing and you've got quesadillas tomorrow (these take about a minute to make!!!)
Serve with tortilla chips and you've got bean dip!

Ingredients

Serves 2

* 1 ripe avocado
* 1 tablespoon fresh orange juice
* 1/2 to 1 teaspoon green Tabasco sauce
* 1/4 teaspoon ground coriander
* 1/2 teaspoon coarse salt and pepper
* 1/2 cup yellow grape tomatoes, halved
* 1 small cucumber, peeled, halved lengthwise, seeded, and cut into 1/2-inch dice
* 1 large or 2 small radishes, halved and thinly sliced
* 2 whole-wheat pitas (6 inches each), top third cut off

Directions

1. Halve and pit avocado. With a spoon, scoop out avocado flesh, cut into chunks, and transfer to a medium bowl. Add orange juice, Tabasco sauce, and coriander; season with salt and pepper. Mix gently to combine.
2. Add tomatoes, cucumber, and radish. Combine, and divide mixture between 2 pitas. Serve immediately.
