Someone out there has to have a picky eater

I can't believe I spawned a picky eater, but it's turning out that way. While the wee man ate just about everything I made mashed up into baby chum a few months ago, he's now rejecting the larger forms of these food items...well, sortof. He'll eat anything if it has cheese on it, or if it's melted into the goo of a grilled cheese sammich. He loves bread, pancakes, bananas, apple, yogurt, egg-yolk omelets, and the occasional mouthful of smashed potatoes/yams. Any suggestions how to get more variety into his diet (minus all that cheese)?

How old is he? T is a very picky guy and his cousin is going to be even pickier (I think). T is 4 and his little cousin is 9 months old. Little cousin only likes sweet potatoes and rejects everything else at this point. My guy used to be the pickiest thing out there, but the older he gets, the more he eats. Now that he is older, I can also negotiate with him, too. If he doesn't like what we are having for dinner, he still has to take 10 bites and then gets a pb&j. Getting him to eat is still a daily struggle. But, there are days that I feel proud of myself.
Does he like fruit? T has always LOVED fruit and so I think as long as he a wide variety of fruit, I don't force the veggies as much. He still like sweet potatoes, sweet peas and corn. I make the cheesie rice and load that with broccoli. He loves the yogurt and so I usually sneak in some flax seed oil in there. It took him awhile, but he will also eat hummus if he have good tasting chips. Oh, and he loves baked beans and from panera he likes the black bean soup. We try to stick with whole wheat bread.
If you are looking to add meat in his diet, I cannot really help you out there. For protein, we use tofu cubes prepared in a variety of ways. He loves veggie dog ("not" dogs), quorn cutlets, he has really started to like nuts lately, too. He prefers soy milk over regular milk. He likes cottage cheese and yogurt too.

I'm reading all of what I have written and realizing what a long, long ways he has come. It is hard having a picky eater and I can empathize - good luck!

My little man is just shy of 10 months, and he likes the weirdest things - Pacific brand pea soup, whole grain breads, and everything I already listed. I read that I should aim for a healthy, well-balanced week instead of nitpicking about a single day. I'm trying to incorporate more iron-rich and protein-rich foods into his diet, as he is slightly anemic and I hate those iron drops my pedi prescribed. The problem with iron-rich is that it's often gross without some kind of sauce (and he doesn't dig dry beans too much), and he's not a huge fan of meats. I'm considering trying some tofu-based items. Any suggestions on yummy methods of preparation?
