GF Buckwheat Flour Banana Bread

Description
Egg free, wheat free, dairy free banana bread. I just about died when I tried this. It is too good to be true!
Ingredients
- 2c Buckwheat Flour
- 1t Baking Soda
- 0.25t salt
- 0.25c Margarine (or Butter)
- 0.25c vegetable oil
- 1c Turbinado Sugar
- 2 Egg Replacer
- 2 Ripe Bananas
Instructions
Set oven at 350 degrees, grease a bread pan.
Combine BW flour, baking soda, salt and turbinado sugar in a bowl. In a small bowl, soften margarine (or butter) and add oil. Add bananas and mash. Dump this bowl into the first and measure out 2 eggs worth of egg replacer (use box instructions).
Add egg replacer to first bowl and mix until wet.
Pour batter into greased pan. Bake until done, should be brown on the top and not squishy. Let pan cool for 10 minutes before upturning on cooling rack.
Notes
This bread is wonderful! I wouldn't guess that it was made without flour, milk or eggs. Ike is working on his fourth piece right now. I think if I reduced the sugar it could be used as regular bread and would taste wonderful with a nut butter, tuna salad, or veggies!
