Super Easy Deep Dish Burrito

Description
A delish and quick to pull together meal..beans and rice and salsa so niiiice!
Ingredients
- 2cn rinsed, organic black beans
- 3clv garlic, pressed
- 1.5c brown basmati rice
- bn of grated cheese, colby jack or something with a kick
- 1 jar of salsa (heat is up to you)
- 1bn ripped, fresh cilantro
- 1 package of whole wheat burritos
- 1cn (small) for dollops..tomato paste
Instructions
cook rice. mix pressed garlic in to black beans. add in ripped up cillantro. spray bottom of round baking dish. put one tortilla on bottom. place a layer of rice, then cover with layer of black beans. Spoon on salsa so the whole shebang is wet. Cover with layer of cheese. Put another tortilla over this layer. Repeat two more times, ending with a 'lid" of tortilla. Place tablespoon dollops of tomate paste on top layer and cover with one final layer of shredded cheese. Sprinkle any spices of choice on top (red pepper flakes, basil or "fajita seasoning' is nice). Place in a pre heated 350 oven and bake for 20--30 minutes until bubbling and your kitchen smells like heaven. Take it out, slice it up and EAT IT FOR GODDESS SAKE! Serve with a mixed green salad with balsamic and olive oil. BAM!
