Description
In rice cooker, put rice & water and start cooking.
Heat cast iron skillet over medium heat. Add onion, sweat 10 seconds, drizzle with oil and saute until almost clear. Add squash, salt and pepper, and stir about 3 minutes over medium heat. Serve over rice.
